Devin Nelles is a food entrepreneur and food & beverage operations specialist with a flair for remedying issues within hospitality settings. With over 20 years of varied work experience in both independent & chain restaurants, hotels, resorts and bed & breakfasts, he has a highly successful background in Canadian and international settings. Throughout his career as an owner, Food & Beverage Manager and Director, Chef and Hospitality Consultant he has been renowned for his ability to restructure restaurant, room service, banquet, lounge and night club operations to boost sales and profits.
After a successful career in management with a prestigious Canadian hotel and family restaurant located in Winnipeg, Manitoba, he was selected for a role as Operations Manager and Food & Beverage Director of a West Indies resort. Within this capacity, he created organizational systems, effective menus as well as multiple sales, quality control and cost saving initiatives. He also contributed to opening a spa and wellness center, and instituting environmental programs.
In 2009, Devin and Christine Nelles formed Niche B.H.O.C., where Devin became the food and beverage turnaround specialist to boutique properties. Within these contract roles, he has been heralded for his innumerable accomplishments. Some of which include revamping menus to better meet client needs and cut costs, improving staff performance, pioneering new business concepts, organizing successful events, creating processes and training programs. He has led various food and beverage turn around projects and even kitchen remodelling projects on both large and small budgets to maximize quality, worker productivity, safety and sanitation. Devin has also rebranded properties through marketing and image building strategies.
As an imaginative and analytical thinker, Devin is skilled in assessing problem areas and innovating opportunities to drive revenues within food and beverage operations. He has an expert knowledge of North American and European guest needs, which has been critical to his success in international properties to provide products and services that cater to tourists.
After deciding to live in Grenada permanently in 2015, Devin launched Island Fever Grenada; a food company dedicated to supporting local farmers and using fresh, local ingredients in creative ways. Creating a successful brand first within St. George’s University and now into Container Park, True Blue, Island Fever Grenada is now poised to grow into the future with its third outlet opening in the near future.
